Who likes zucchini? I love it, and its pretty versatile too! We have used it as a base for taco boats, sautéed them, grilled them, and even grown them! Love Zucchini!
Do you know why Zucchini is so widely revered?
Here is a sampling of why!
Oh, and good news for my fellow Diabetics! The abundance of Vitamin B in zucchini benefits us by breaking down the sugar in our bodies, and the fiber and pectin are vital in regulating our blood sugar levels!
In other words, eat more zucchini! 🙂

Do you like Zucchini?
We grow our own zucchini, and it’s been one of our most successful harvests – we have it in the most perfect, sun-drenched spot, and have had good harvests for two seasons now, which is amazing, because we LOVE zucchini, and there are probably an infinite number of ways to use them.
Here is one delicious way…. made this recipe for our 21 Day Fix group, but its just so good I had to share! The Panko really adds a nice little crust/crunch, and these are a perfect way to use some of your zucchini!

Okay this is just straight up simple, yet delicious. It’s so easy! I love zucchini (we grow our own) in basically any form – so tasty and delicious. I really enjoy this one, and thought maybe you would too!
