Tasty Thursday – Mango Salsa

My husband discovered this one day and to say I have been hooked since is a pretty serious understatement. I suppose it should be noted that I am an absolute SUCKER for anything that pairs with a tortilla chip, and this certainly fits that bill!

We have since taken to making our own, and I pretty much cannot get enough of this stuff – plus it’s clean ingredients (natural sugars for the win!)

I like it with tortilla’s, but it actually works well on top of grilled chicken, too!

Note: I buy pre-peeled mangoes because it makes it easier, and I am all about making life easier!

Sunday Shakeology – Morning Refresher

Ahhh even the name instantly relaxes and rejuvenates me! Plus, it helps that these are some of my FAVORITE things!

Mangoes contain an abundance of vitamins, minerals, and antioxidants. They are very low in saturated fat, cholesterol and sodium. They are also an excellent source of dietary fiber and vitamin B6, as well as a good source of vitamin A and vitamin C. Mangoes are rich in minerals like potassium, magnesium, and copper, and they are one of the best sources of quercetin, beta carotene and astragalin.

Pineapple is also a storehouse of huge health benefits due to its wealth of nutrients, vitamins and minerals, including potassium, copper, manganese, calcium, magnesium, vitamin C, beta carotene, thiamin, B6, and folate, as well as soluble and insoluble fiber and bromelain.

And banana….¬†they¬†have been considered one of the healthiest options for fruit consumption for many years due to the¬†impressive¬†nutritional content,¬†which includes¬†vitamins like vitamin C,¬†vitamin B6,¬†riboflavin, folate, pantothenic acid, and¬†niacin, as well as trace amounts of other vitamins. In terms of¬†minerals,¬†bananas deliver a significant amount of potassium,¬†magnesium, manganese,and copper. Bananas are also good sources of dietary fiber and protein.

Whew… thats a lot of vitamins, minerals, and nutrients in one little handful of fruit! Then when you add in the 70 superfoods of Shakeology, and dang, thats quite a lineup!
