Whip It Up Wednesday – Creamy Vegan Mac & Cheese

Can I get a YUM?!

Creamy Vegan Mac-n-Cheese

Ingredients:

10 ounces dried macaroni (or about 2⅔ cups)
1 cup diced yellow potatoes
¼ cup diced carrots
⅓ cup chopped onion
¾ cup liquid from pot of boiled veggies
½ cup raw soaked cashews
¼ cup canned coconut milk
2 1/2 Tablespoons nutritional yeast flakes
1 Tablespoon lemon juice
1 teaspoon Himalayan salt
¼ teaspoon garlic powder

Instructions:

Soak cashews in boiling water for 15-30 minutes while you cook everything else.

Cook macaroni according to package instructions and drain; set aside.

Bring 2-3 cups of water to boil in a small pot. Place chopped potatoes, carrots, and onion into the boiling water, and cook for about 10 minutes, or until vegetables are tender and soft.

Use a slotted spoon to remove the veggies from cooking water, and place them in your blender (a high-powered blender works best).

Add ¾ cup of that cooking water to your blender, along with the remaining ingredients. Blend until smooth.

Pour sauce over cooked macaroni noodles and enjoy! Great over broccoli or other veggies!

Whole Foods Wednesday – Beets

Beets, beets, delicious fruits… oh wait, wrong jingle! And beets aren’t a fruit – but they ARE colorful little powerhouses of nutrients, vitamins, and minerals!

As a very good source of the antioxidant manganese and a good source of the antioxidant vitamin C, the unique phytonutrients in beets provide antioxidant support in a different way than other antioxidant-rich vegetables. These little beauties are also an excellent source of folate and a very good source of manganese, potassium and copper. They are a good source of dietary fiber, magnesium, phosphorus, vitamin C, iron and vitamin B6.

I love beets – I get this love from my mama!

Sunday Shakeology – Snickers

Sometimes the candy cravings are too real. And we all know “we’re not ourselves when we are hungry”, right? 🙂

A liquid version is just as tasty but with much less guilt. Am I saying never to have the real thing? HARDLY. Am I saying there is a healthier way for those periods of time where you would love nothing more than to eat several Snickers several days in a row? YEAH. That’s what I’m saying.

Moderation is key. Real thing the exception. Healthier version the rule!

Balance.

Saturday Snack Spotlight – Frozen Yogurt Trail Mix Bars

Warmer weather is coming, and we tend to look towards cooling snacks in the warmer months, right? Not saying you have to rely heavily on ice cream or chase after the Ice Cream truck (ahh, memories!), but I totally get your desire for the cold stuff!

These Frozen Yogurt Trail Mix Bars are great, and not only can you create different flavors by using extracts mixed in the yogurt (or use flavored yogurt, but I steer away from those, personally), but you can also use different fruits, a variety of nuts (I have sliced almonds, pumpkin seeds, sunflower seeds, walnuts, peanuts, and cashews in mine), and really get tons of goodness into a little bar!

You can opt not to add the chocolate chips (I prefer mini ones, but didn’t have any on hand), but I mean, a little chocolate never hurt anyone, so don’t be afraid to live a little! 🙂

I used coconut granola to add even more of a flavor boost!

You can also opt to use ice cube trays to make these bite sized (I have the soft bottom ones that allow you to pop contents out, but a knife would get them out of a standard ice cube tray).

Try It Tuesday – Beachbody All Access

I used to think “results? From my living room? With no gym equipment?! Pfffft”

I mean… I had questions! Like..

Tip Tuesday – Post-Vacay Life Reassessment

Obviously, we would all rather be on vacation, or much more frequently than we are. And even if you love your job, coming off a vacation-high and going back to work can be draining, and make you long for the days you were only concerned about mai tai’s and the lazy river.

But if you find yourself TRULY depressed, or upset to be back home, it might be time to reassess life and see if you might need to make some changes. After all, a proper vacation should make you appreciate your life more, not depress you and make you even more down about your life.

Post vacation is a great time to gauge how things make you feel and decide if you shouldn’t bite the bullet. After all, your end goal is to create a life you don’t need a vacation from!
