Oh goodness, watermelon. There is nothing fresher in my mind. The smell, the taste, the texture… so delicious! I buy watermelon a lot in its peak months, and it never goes to waste!
Worth noting that this recipe calls for a little basil – we grow our own, and nothing beats that! Basil is another herb full of health benefits. Basil contains a wide range of essential oils rich in phenolic compounds and a wide array of other natural products including polyphenols such as flavonoids and anthocyanins. Plus, Basil is rich in vitamin A, vitamin K, vitamin C, magnesium, iron, potassium, and calcium!
I love cheese. Most kinds of cheese, though I confess fresh mozzarella reaaaaaally holds a special place in my heart!
The best part about this is, in my opinion, is that it’s simple and yet, outside of some cheese (which I believe is fine in moderation!) it’s actually good for you.
We like to make our own tomato sauce – it’s easy, so we can control what goes in it and not have to deal with preservatives, etc. So it’s a healthy alternative but it feels truly indulgent – and that my friends, is a WIN! 🙂
