Are they perfect? Nope.
Are they all the exact same size/shape? Nope.

But they taste good and they didn’t bring about 1 single mishap or meltdown while I made them.

Historically, baking gets the best of me due to its precise nature… so that these edible babes are tasty and didn’t trip me up, we’re calling it a win! 🙌🏼

Some people do complicated cookies but I’m not one of them!

Good Eats – BLT Mac & Cheese

Full disclosure: this is a carb-splurge of a dish, but if you use Dreamfields or other low-carb pasta instead, that will help cut down the carbs.

So it had the leeks, and bacon (because of course I’d never forget that!), and diced tomatoes. Plenty of cheese, and a macaroni that holds up to sauce well (we used cavatappi, because it’s fun!)

I totally loved it – delicious and super filling! Best part: minimal dirty pots!

Indulgence Alert – Cannoli Cheesecake

I am a firm believer in balance. I know that if I never allow myself to have an indulgence here and there, I will become resentful, and I eventually will give in to my indulgence anyways, but it will be overboard. I believe in control. I believe in allowing myself treats. As a diabetic, this might seem counter-intuitive to some, but for me and my personality-type, I am better off if I allow myself a treat instead of denying myself. Obviously, self-control and portion size are really key here, as well as keeping everything else super healthy and drinking lots of water, but I find it worth it!

Ingredients –

7oz package of cannoli shells

3 tablespoons unsalted butter, melted

2 tablespoons sugar

4 cups whole milk ricotta cheese

1 ¼ cups sugar

¼ cup Flour

½ cup whipping cream

2 teaspoons pure vanilla extract

1 teaspoon orange zest

5 large eggs

1/3 cup mini chocolate chips

Confectionery sugar for sprinkling (optional, but so good!)
