Last night, being very typical New England winter weather, I aimed for something hearty, delicious, and comforting. So, Mama’s Italian Soup it was!
This was a childhood favorite, though I would sometimes fight my mom on me eating ground beef! As an adult, I appreciate it even more for how delicious it is. Enjoy!
6 cups of water
6 beef bouillon cubes or 1 cup beef stock
1 cup chopped celery
1 cup chopped onion
Bag of frozen vegs (I like using corn, peas, carrots, green beans, and baby lima beans)
1 can kidney beans (I add this to my mama’s because I LOVE kidney beans)
Large can crushed tomatoes
Salt & Pepper; to taste
Italian seasoning; to taste
Dried basil; to taste
8 ounces of pasta; cooked
1 lb Hamburg
In large pot, cook all ingredients except pasta and Hamburg for 1 hour.
Add pasta and drop Hamburg in by the teaspoonful until cooked. Enjoy!
Good topped with parmesan cheese and enjoyed with Italian Bread
